Coconut chicken

Preparation time: 15 minutes
Cooking time: 60 minutes
Ingredients (4 servings):
- 1 chicken in pieces
- peanut oil
- 1 onion
- garlic
- 1 tomato
- parsley
- ginger

1 tablespoon turmeric

1 spoon curry

salt and pepper

2 cans of coconut milk

chopped peanuts

grated coconut
Sauté chopped chicken in peanut oil.
Add the finely chopped onion, garlic, tomato cut into small pieces, parsley, ginger, a tablespoon of turmeric, a tablespoon of curry, salt and pepper
Cook for a few minutes
Pour over the chicken the first box of coconut milk + half of its volume in water.
Let simmer 20 more minutes.

At the last moment, cook the rice in the second box of coconut milk + water.
When eating, accompany grated coconut , chopped peanuts, and sliced bananas that are placed around the rice.
